before and after

I almost cried leaving the farmers market last week.
It was the last one until next June....JUNE!!! 
but they do have a smaller market each week at Tony Caputos....I need to find out more about that....anyone know?

Since it was the last market, I let the kids pick out whatever they wanted, and the boy wanted this. 
A buttercup squash. I had never heard of it.....but why not try it out?

It was (of course) delicious. 
We love squash--it was similar to an acorn squash, and we prepared it very simply.

Roasted Buttercup Squash

Halve and clean the squash.
Slice, and brush the insides with olive oil. 
Sprinkle with course salt, cracked pepper, and a little bit of dried sage. 

Place on a lined baking sheet and roast in a preheated 425° oven, 30-45 minutes, until fork tender. 

We drizzled it with a little bit of the local honey we bought the same night and it was soooooo good. 
The kids ate it FIRST. What kids eats their vegetables first?

this is grant's favorite kind of squash-- i used it last week when i tried your squash orzo! SO good!

our market is almost done too. i can feel it. next week it might be empty! but i struck a little deal with the egg man to supply us with his farm eggs all through the winter!!! i'm ecstatic.

Yum! My kids eat their's first too, if they happen to be squash or sweet potatoes. I have a butternut squash on the counter that is next on the chopping block! ;)

yummmmmm! At my house anytime I get the honey bear out the kiddos get all giddy...amazing what that little bear can get them to eat.

I have a market near my house and it runs all year long - I'm always so grateful. I need to take myself there more on cold winter days:)

Mmm! Gonna try this. I've been buying acorn squash like crazy bc they are super cheap. Also, wanted to tell you, you can roast the seeds of these winter squashes just like roasted pumpkin seeds- so don't throw them away!
