strawberry leather

Strawberry Leather
(see apricot here)

this is the easiest "recipe" I could ever share. 
1. Purchase strawberries.
2. Feel sorry for yourself that you no longer live in California, minutes from a strawberry stand, where you are convinced sells the world's best strawberries.
(step 2 is optional)
3. Wash berries
4. Hull and half berries.
5. "measure". You don't need to measure at all--I just did this for he purpose of telling you how much I used (about 5 cups). But use however many you have. 
5 cups of strawberries = about a pan and a half of fruit leather.
6. Cook on low heat for about 15 minutes. Give them a few good mashes so the juices come out. 
Add a bit of honey (few TBS) if you're not using those amazing strawberry-stand berries.
7. Puree.
8. Pour and spread onto a parchment lined baking sheet.
9. Put in the oven at 150° for 6-8 hours, until leather peels away easily from parchment.
10. Using kitchen scissors, cut into rectangles, and roll them up. (you can even leave them on the parchment and roll them) 
11. Or just eat them right away.

No to brag, but I do really think strawberries from the strawberry stand in California are the best strawberries! They have a flavor and texture superior to any berry that has been refrigerated. Great way to showcase beautiful color and flsvor!

Wonder if you can sub the sugar for stevia? Would be a perfect diabetic snack to take on the go if you can.

Summer: I used my big food processor for this one.

Shannon: haha these were gone in a day and a half....I'm sure they will be eaten before they go bad. I rolled them with the parchment still on and then just put them in a ziploc.

Kathleen: I'm sure stevia would be just fine! If the strawberries are ripe enough, you really don't need any sweetener at all.

I could not get the parchment off in some places....any ideas that help it not stick so bad??

Amy! I am sorry it stuck--I have made this several times and never had problems with it sticking....maybe it was too thin?

and i wonder about adding other fruits to the strawberries...a handful of blueberries, or blackberries...maybe a few chunks of pineapple. Lots of possibilities :)

Ack! My oven temp will only go down to 170... Think they would turn out ok if I simply didn't cook them as long?

I had cooked them from your site before and they were delicious. But they were done in the middle of the night and I was the only one awake and, I admit, I ate them all and didn't ever tell anyone (the kids) that I ever made any... I know! So, I started the process again, from memory, and totally skipped the pan cooking and went straight to ninja (food processer) then cookie sheet. Do you think that will hurt the cooking process??

I did omit the pan cooking portion of the recipe and went straight to puree then cookie sheet and they were still great AND I'm not sure if it had anything to do with skipping the pan cooking part, but it only took mine about 4 - 5 hours to cook. I cooked it at 150 covection bake. Thanks for the great recipe! I will be making this repeatedly!!
