a simple salad

I had a big post planned--a follow up to last week's organic post, on eating more seasonally and locally......and then I got too busy enjoying the local season. 

So instead, I leave you with one of my favorite salads these days. We're still eating lots and lots and lots of greens from the garden, so I'm always throwing new combinations together.

Here we have (with absolutely no measurements, as usual)
Roasted Brussels Sprout and Avocado Salad
-mixed garden greens
-red onion
-avocado
roasted brussels sprouts (half, and toss with olive oil and s&p and roast until toasty brown)
....and sometimes I'll throw in an egg fried in a bit of olive oil....mmm

 honey mustard dressing:
-one part white wine vinegar to two parts olive oil
-a dollop of dijon mustard
-a large drizzle of honey
-s&p

add dressing ingredients to a small jar and give it a good shake. 
toss with salad and enjoy!

I'd love to hear your favorite salads right now--I'm always looking for new ways to eat my greens.

Quinoa, mixed baby greens, cucumbers, roasted potatoes, white wine vinaigrette with chopped fresh herbs.

Mixed greens, green onions, fresh corn, avocado, toasted, slivered almonds and a vinaigrette a lot like the one you listed here. YUM!

We're loving fresh strawberries and guacamole on our salads right now. For some reason, making the guac instead of just slicing an avocado seems so decadent!

Mmm the roasted brussel sprouts sound good. The other night we made grilled chicken rubbed w/ olive oil, kosher salt and cracked pepper and some feta cheese on top. The next day I added that to my lunch salad and actually some avocado pico that I had in the fridge and it was crazy delicious with a little vinaigrette.

i love salad wraps-that's what we ate yesterday. grill some chicken, cut up any greens you have into bit size pieces, tomatoes of course, and then i made some jalapeno cream cheese/sour cream sauce to go over (not the healthiest but amazing!). wrap up in your favorite spinach tortilla and let the magic begin!

favorite normal quick easy salad- spinach + whatever mixed greens i have, cucumber, almonds, tomatoes, carrots, fresh broccoli, & s&p. add your favorite dressin on top.

favorite fresh fruit salad-
sliced up grapefruit (sqeeze the juice of the grapefruit after slicing), kiwi, nectarines, and any berries we have left over. some may like a little agave nectar on top!

We are all about the sweet salads! The favorite in my house is mixed greens, walnuts, strawberries, blackberries, goat cheese, and a raspberry vinagrette. mmm!

mixed greens, lots of fresh chopped herbs (basil, mint, parsley, cilantro, tarragon..), tomato, carrots, avacado, fresh mozzarela, anything really. and this dressing:
-1 cup olive oil
-1/3 fresh squeezed orange juice
-3 minced cloves garlic
-s&p
-sometimes fresh rosemary

- spinach
- black beans
- red onion
- avocado
- a little pepper jack cheese (shredded or chopped up into teeny tiny bits - we like tillamook b/c it has real jalapenos and no artificial growth hormone)
- dressing: salsa + lime juice + cilantro + a sprinkle of cumin

mmm mmm good! :)
