all about the pumpkin

pumpkins! everywhere!
I don't know why, but I seem to have a slight infatuation with pumpkins.
Every year I think I get just as more excited than the kids, to go pick ours out for the season.
We run down the rows and tromp right into the vines to find the good ones.
I am determined, that someday, somewhere, we will have our own little pumpkin patch.

white and mini.
bumpy
short
I love them all,
pumpkins, pumpkins,
in the fall.

And just as much as I love to look at them.....I love to eat them too!
I am surprised at how many people decorate their homes with pretty pumpkin and squash and then just toss them at the season's end.
Roast those beauties up, remove the skin, and puree them! The puree will keep in your freezer all winter and you can add it to anything--soups, sauces, breads, and here is one of our favorites:
Whole Wheat Pumpkin Pancakes.
This is a big batch--it made 20 large, very filling pancakes.  It can easily be halved, but we had them for our Saturday breakfast and then I froze the rest to pull out for a quick hot breakfast before school.


Whole Wheat Pumpkin Pancakes
combine:
2 cups pumpkin puree
4 TBS melted butter
1/2 cup pure maple syrup
4 eggs
3 1/4 cups buttermilk
2 teaspoon pure vanilla

in separate bowl combine:
3 cups whole wheat flour
1 cup corn meal
1/2 cup ground flax seed
1 cup whole oats
1 TBS + 2 tsp baking powder
2 teaspoon baking soda
3/4 tsp cinnamon
pinch of salt

slowly stir dry ingredients into wet until just combined--careful not to over mix.

Pour onto preheated (350°ish) and buttered griddle.
Turn over pancake when bubbles start to appear on top.

Top with warm maple syrup.

Oooo....I'm like you. I like pumpkins everywhere and in everything. I'm sure I have way too much fun at the pumpkin patch. I'm glad you and your fam did too.:-)

agreed. where would we be without pumpkins?! they are like my christmas tree, until i can actually get out the christmas tree. except minus the lights, and bonus: edible!

sheena, do you have a favorite place you like to shop for your little girl? she is always dressed so playful/stylish/effortless/colorful/exactly how i wish i were dressed!!

I love pumpkins. I love them all! Big, little, tall, fat, short, skinny, heavy, and light...ahh. I like them verymuchso. And I also really like your photos. As usual. :)

I love pumpkin sauce for pizzas and pastas. It is divine. (Pumpkin puree, tomato paste, cumin, basil, chili flakes, oregano, s&p, o.o., garlic, and top with Gruyere cheese.) For pizza, just top with roasted tomatoes and the cheese. For the pasta, sometimes a bit of ground turkey and, of course, the cheese.

I love pumpkin anything...sometimes i just roast them and eat them plain! Also loving your pics from your pumpkin patch trip - especially the b&w one with your little girl pulling the wagon. :)

I've been experimenting with pumpkin recipes too, and so far my conclusion has been that pumpkin for breakfast is the best. Pumpkin waffles! Pumpkin pancakes! Topped with butter and pure maple syrup, oh my!

Totally- the trip to the pumpkin patch is one of the highlights of my year. These pictures are awesome. I really like the first one, kinda eerie.. nice.
The pancakes sound great and I love that photo of them, beautiful. I want to steal your syrup bottle.

I looooove pumpkin as well, all year round! Today I made soft pumpkin pretzel bites, I think those tied with various pumpkin smoothies are my favourite use of pumpkin. I will be posting that recipe on my blog tomorrow if you want to check it out ;) very worth it.

I love all the black and white photos in this, especially of your little girl pulling that huge wagon! I just made whole wheat pumpkin pancakes last weekend, too, and they were scrumptious. LOVE pumpkins! :)

I don't really decorate outside with pumpkins or squash as it is nourishing food and I don't want it to go to waste. I bake my squash in a roaster, clean out the yummyness and freeze it in one cup bags so we can pull it out of the freezer all year long and make our yummy pumpkin recipes!!

I can't wait to try your pumpkin recipe...OH and REAL maple syrup is the only way to go.

Speaking of not letting anything go to waste, after we cook our squash and clean out all of the yummy goodness to eat, we give the cooked skins to our chickens and they very much enjoy eating those and giving our chickens lots of good things to eat, means they give us wonderful eggs to eat!

BTW....your photography is truly amazing...I feel like I had my own trip to the pumpkin patch today, thanks to you and your photos!

mmm. Pumpkin. Yesterday we made pumpkin margaritas and they were so good. I wondered if you know what to do with the leftover pumpkin, you add 3/4 cup brown sugar and 2 cups of water to it but then strain out as much liquid as you can for the margaritas. Is it to sweet to cook with it?

These pancakes look delish. I am also a big fan of pumpkin and in my freezer there always is some pumpkin puree. These recipe of pancakes is very healthy and I am going to make them next Sunday breakfast.
But I'd like to ask you, how do you freeze the pancakes? Or it's better to say, what do you do with them after taking out from a freezer? Do you unfreeze them? Or fry them on the griddle again?
