We may be moving into fall, but all the best summer foods are still easy to find.....I LOVE this time of year for food. And the next month only gets better as we start to add the fall and winter squashes to summer staples.
Here are a few favorites right now.
Raw Oats with Peaches and Blackberries
raw oats is one of my favorite breakfasts....it's so easy and filling.
soak your oats for 5-15 minutes in almond milk
(add a little maple syrup or honey if you like)
top with chopped almonds, blackberries, peaches, shredded coconut and flax and chia seeds
and here is one of THE easiest dinners you can throw together on a late summer evening.
Late Summer Veggie Tacos
saute in olive oil:
-diced zucchini, tomatoes, chopped red onion, red bell pepper, and fresh corn cut right off the cob
-add two cups of black beans
-add some garlic, a dash of cumin, pinch of salt, zest and juice of one lime
-saute until veggies are tender
-spoon into warm corn tortillas and top with crumbled goat cheese and cilantro
