baked kale chips

I know what you're thinking.....but just stop.

kale? chips!??

these are soooooo good.
I didn't make enough.
They were gone before dinner.

Go get yourself some kale right now (I'm assuming you don't just keep in on hand)

Baked Kale Chips
recipe adapted from Roost Blog

-1 bunch of kale (or more---I promise it goes fast!!) rinsed, dried, bottom (thickest part) of the stems cut off.
-olive oil
-lemon zest (a few tsp-ish)
-coarse salt and cracked pepper

Cut (or tear) kale into smaller, bite sized pieces.
toss with olive oil, lemon zest, and s&p
spread onto lined baking sheet and bake at 250° 30-35 minutes, or until light and crisp.

I keep seeing this recipe pop up all over the blogosphere and web! I'm hoping to give them a try this summer. Last summer our kale crop was so big, we didn't know what to do with it all.

We LOVE kale chips at our house. We get kale in our CSA box a lot, and my kids inhale it when I make kale chips. I have done them a few ways (w/parmesan, just s&p, etc), but this last time I used 2 T olive oil, the juice of a whole lemon, and salt and pepper. I mixed the kale all up in it and let it sit for about 5 minutes before I baked it. Oh, and I do them at 350 for 15 minutes. I'll have to try the lower temperature next time and see if there's a difference. You can also do spinach!

Yay!! Im so glad you made these! I need to make them again because last time I ate them all before my husband got home and he was upset :) Yours look sooo good!

oh my gosh. i have bunches and bunches of kale on hand and I just couldn't figure out what to do with it. ok. maybe not so much. but this does kinda make me want to try that with my spinach, at least. how interesting.

You said "cut or tear Kale into bite size pieces"! Sometimes (like on days like today) I wish I could - only to put him back together later!

I have seriously tried so many recipes with Kale in it just to please the man, but my kids won't eat it because it's too mushy and slimy.

Why did I not think to "bake" them?

Oh yah - it's cause I'm not a creative cook like you!

Can't wait to try these - maybe for his birthday dinner coming up - you're invited by the way - remember the good old days when somehow your spring break vacations always coordinated around his birthday?

Miss you guys and can't wait to see you in May!

I picked up some kale at the farmers' market this weekend and HAD to try this recipe. It turned out perfectly!

I even ran an experiment on my boyfriend. Put a bowl of the kale chips next to him at the computer and then waited to see what would happen. 5 minutes later the entire batch was gone! I never thought I'd see the day he'd eat kale.

Try this variation: Lightly coat with coconut oil instead of olive, toss in a handful of fresh flaked coconut, and sprinkle with a little salt before baking. Yummo!
