burrito bowls

This is one of my favorite go to meals--we have it at least once a week for lunch, and it's a perfect quick dinner--especially if you already have the rice cooked.

Burrito Bowls
-cooked brown rice
-black beans
-pepper jack cheese
-avocado
-salsa
-sour cream
-tortilla chips

....is that not the easiest thing you've ever made??
And the good thing is, you can mix it up. As spring and summer veggies come into season, you throw them in too. 
-zucchini
-tomatoes
-corn
-potatoes....really, anything goes.

That looks lovely and very tasteful. We tend to do the same around here and the children love that: Piecing together their own meal, picking little delicious bites from all the bowls, it's fun!

lettuce cups! brown some ground turkey or chicken with some asian seasoning, green onions and cilantro and soy sauce. serve with lettuce leaves-we prefer bibb lettuce. add asian noodles or brown rice, grated carrots, bean sprouts, edmamae, cilantro. we serve with a variety of sauces-sweet & sour, teriyaki, chili! a qucik go to meal that we all love and there is something about an interactive meal with family that adds to the delight!

buffalo chicken salad
chicken tacos
Cajun chicken pasta with spinach cream sauce
homemade pizza
and basically anything that includes sour cream or chicken.

I love your enjoyment of simple things, and how you are okay with slowing down and doing nothing sometimes. I long for that, truthfully, and I know that I am the only one who can make it happen. Thanks for sharing your journey, and for the beautiful photos. I love your outlook.

Eating a quicky meal right now. Fresh cod, roasted with salt and pepper. Couscous with minced fresh basil. Squirt fresh lemon over all of it. And it took all of 10 minutes to make.

My go to meal is a piece of toasted grainy bread, hummus, and a fried egg on top. Serve with salad or sauteed veg et viola... it hits all the marks.

salmon is our go to staple here, lately. I just buy the frozen salmon from sams club that is individually wrapped, so it's easy to thaw in a bowl of warer (20 min, tops) I make a big foil pouch, sprinkle with garlic salt, a bunch of dill weed and a heavy squirt of lime juice. Top each fillet with a sliver of a pat of butter, fold up the foil pouch over the top and grill for 8 minutes. We like it best with a fat bowl of pesto w/tomatoes and zucchini, or last night we tried wheat pasta(meh. B-.) with yellow squash, mozerella cheese, basil and marinara baked together.

I can't get enough salmon. yum.

Mmmm this look delicious! Are those the Archer Farms blue corn tortilla chips with flax seed? Those are our very favorite and the only ones we ever buy. They are SO good!

We're having what would probably be called a Southwest Chicken Salad in a restaurant. Lettuce, fresh corn, diced tomatoes, red onion, green bell pepper, jalapeño, a bit of cheese and ranch dressing (except for dairy-free me) and diced grilled chicken.

One of our favorite super easy and quick meals is BBQ chicken sandwiches. I just get a rotisserie chicken from Whole Foods and some natural BBQ sauce. Shred the chicken, heat with the sauce and a couple diced pickled jalapeños and serve on buns that have been toasted with a bit of olive oil and garlic powder. Wins every time, takes about 15 minutes to make and just uses one dish.
