breakfast (for dinner!)

Whole Wheat Waffles
with mixed berries and warm maple syrup

1/4 c oil
1/2 c applesauce
2 eggs
1 1/2 c milk
1/2 tsp vanilla
2 cups whole wheat flour
1/4 c ground flax seed
1/3 c old fashioned oats
2 TBS sugar
4 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon

Mix oil, applesauce, eggs, milk, and vanilla. Add dry ingredients, and stir until everything is incorporated. Batter will be thick.

Ladle into preheated (and sprayed!) waffle iron, cook until golden brown. Serve with mixed berries and warm maple syrup.

Looks almost as good as the burger/fried egg/bacon I saw Paula Deen sandwich between 2 glazed donuts yesterday. Nast!
Those waffles look really good, I like the oats idea, never tried that. Thanks for sharing another healthy recipe!

this is perfect.
i've been meaning to make some whole wheat waffles and was just about to research a recipe.
my little guy goes through waffles like crazy and i just realized i should just make them, they're much healthier homemade.

and, the old fashion oats. do you mean the rolled oatmeal, the non-instant kind?

sheena, really and truly, i am so excited about your bread! (thanks!) and ever since i ripped open the bag of whole wheat flour yesterday, my mind has been buzzing with ways to use it. am so pumped. and now i need to get myself a waffle iron! for now, pancakes will have to do.

just wanted to let you know that after seeing this recipe. i immediately jumped up and made some for lunch and extras to freeze for breakfast. luckily, i had all the ingredients on hand.
they were perfect. just the recipe i was looking for!
