I love spending time with amazing friends. You know, the kind who stay up waaaaaay too late and get way too silly and give you private light shows and share inside joke. Those friends are the best.

And one more blog that I am so happy I found, Bobbie Rounds the World, about circumnavigating the world by boat: 24,000 miles in 24 months. The very thought of it FREAKS me out, so I will just enjoy her photos and wish I were even a bit that cool. Check it out!

Raspberry Sandwich Cookies!

Raspberry Sandwich Cookies
1 1/4 cups all-purpose flour
3/4 cup unsweetened Dutch-process cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups sugar, plus more for flattening cookies
10 tablespoons unsalted butter, room temperature
1 large egg, room temperature
Preheat the oven to 375 degrees Fahrenheit. Sift together flour, cocoa, baking soda, baking powder, and salt in a large bowl.
In the bowl of an electric mixer fitted with a paddle attachment, cream sugar and butter together until very light and fluffy, about 2 minutes. Add the egg and beat to combine. With the mixer on low speed, gradually add flour mixure and continue beating until dough is well-combined.
Using a 1 1/4 inch ice cream scoop, drop the dough onto parchment-lined baking sheets about two inches apart. Dip the bottom of a glass in sugar; press to flatten the cookies to about 1/8 inch thick. You may want to use a knife or flat spatula to loosen stuck cookies from the bottom of the glass.
Transfer to oven and bake until the cookies are firm, 10 to 12 minutes, rotating sheets halfway through. Transfer baking sheets to wire racks and cool completely.
Place cream filling in a pastry bag fitted with a coupler (uh yeah.....I just spooned it in) and pipe abut 1 tablespoon of filling onto the flat side of half the cookies. Place the remaining cookies on top and squeeze the filling to the edges gently. Filled cookies can be stored in airtight containers at room temperature up to 2 days.
Frosting (bare with me on this one)
1 package cream cheese, room temperature
3 1/2 -4 1/2 cups powdered sugar (I'm totally guessing on this one--I ran out at 2 1/2 cups--if you make this can you tell me how much you used.....thanks!!)
1 6oz container raspberries

two obsessions, and one confession

- Honey Whole Wheat Bread
- 1 1/2 c warm water
- 1 (.25 ounce) package active dry yeast
- 1/3 c honey
- 2 1/2 c all purpose flour
- 2 TBS butter, melted
- 1/2 TBS salt
- 1 3/4 c whole wheat flour
- 1/4c ground flax seed
- edited to add: Yes. I use a breadmaker. I use that precious time while it's kneading and mixing and magically forming my bread dough to work on my table, play princess, work on my table in a princess dress, and clean my toilet. I am so greatful for that blessed machine. This can be made without one.
- Let your water, yeast and honey sit for the 20 minutes, as above.
- Mix in remaining ingredients. Knead on floured surface until it can easily pull away from the counter, but still a bit sticky to the touch. Place in greased bowl, cover with towel and let rise until doubled.
- Punch down, and form loaf, or place in loaf pans and let rise again.

chocolate cake + orange buttercream = my favorite

Recipe adapted from Hannah's blog.
Chocolate Cake
From Southern Living
2 (4-oz.) bittersweet chocolate baking bars, chopped
1/2 cup butter, softened
1 2/3 cups granulated sugar
1/3 cup firmly packed light brown sugar
3 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 (8-oz.) container sour cream
1 teaspoon vanilla extract
1 cup boiling water.
1. Preheat oven to 350°. Grease and flour 2 (9-inch) round pans. Line bottoms of pans with parchment paper. Lightly grease parchment paper.
2. Melt chocolate in a microwave-safe bowl at HIGH 1 1/2 minutes or until smooth, stirring at 30-second intervals.
3. Beat butter and sugars at medium speed with a heavy-duty electric stand mixer until well blended (about 3 minutes). Add eggs, 1 at a time, beating just until blended after each addition. Add melted chocolate, beating just until blended.
4. Sift together flour, baking soda, and salt. Gradually add to chocolate mixture alternately with sour cream, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. (Mixture will be thick.)
5. Stir vanilla into hot water. Gradually add water to batter in a slow, steady stream, beating at low speed just until blended. Pour batter into prepared pans.
6. Bake at 350° for 38 to 42 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on a wire rack 10 minutes. Remove from pans to wire rack, and let cool completely (about 1 hour).
Spread Filling between layers, spreading to edges of cake and leveling with an offset spatula. Gently press top cake layer down. Spread Frosting over top and sides of cake. Swirl frosting using back of a spoon, if desired. Top with Candied Oranges.
Candied Oranges
2 large navel oranges, thinly sliced
2 cups sugar
1/2 vanilla bean, split
1. Bring 4 cups water to a boil in a 3- to 3 1/2-qt. saucepan over medium-high heat. Add oranges. Return to a boil; cook 5 minutes. Transfer oranges to a parchment paper-lined jelly-roll pan, using a slotted spoon; discard water.
2. Combine sugar and 2 cups water in saucepan. Scrape seeds from vanilla bean into water; add vanilla bean to water. Bring to a boil over medium-high heat, stirring occasionally, until sugar is dissolved. Add orange slices. Return to a boil; cover, reduce heat to medium, and simmer 10 minutes. Uncover and cook, stirring occasionally, 35 to 45 minutes or until rinds are softened and translucent.
3. Remove oranges, using tongs; arrange on parchment paper-lined jelly-roll pan, folding oranges as desired. Blot with paper towels. 4. Pour syrup through a fine wire-mesh strainer into a bowl, reserving syrup and vanilla bean for another use. Discard solids. Let oranges stand 15 minutes.
Vanilla Orange Buttercream
5 cups confectioners' sugar
1 1/2 cup butter
1 teaspoon vanilla extract
1 tablespoon orange extract
3 to 5 tablespoons milk
Directions
1. In a standing mixer fitted with a whisk, mix together sugar and butter.
2. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes. 3. Add extracts and milk and continue to beat on medium speed for 1 minute more, adding more milk if needed for spreading consistency.
yum. yum. yum.
