Well my friends, by the time you read this, I will have (fingers crossed) successfully drove myself, two children, and one big yellow dog all the way to the great state of Wyoming.

To visit sister, who lives on top of a mountain where there is something like 27 feet of snow....

....but we are so excited to play and explore small (we're talking very very small) towns!

...dined on chocolate and orange tortes from our favorite bakery, in that very fort
...watched the Time Travelers Wife which was booooooooooooooor-ing. The book was 5 bazillion times better
...slept in (hooray!)
...glued sequins and lace and other sparkly bejeweled thingamabobs to Valentines
...had a candlelit pizookie with my 3 favorite Valentines, in our pajamas, because we are fancy like that

...it was a very good weekend.

a simple salad

note: many of my "recipes" are just quick little things I literally throw together.....I am not a measuring type of girl (unless I'm baking of course). So this salad, as well as alot of my other recipes, can be adjusted to YOUR liking, and you can make as big (or small) of a salad as you want. Perfect by itself for lunch, or with a piece of chicken or salmon for dinner.

a simple salad

your favorite mixed greens
pecans (walnuts are good too)
thinly sliced red onion
fresh pear slices
shaved parmesan cheese
drizzle with red wine vinaigrette and toss to coat.


red wine vinaigrette
(I mix this up and keep it in my fridge so I can put together quick salads throughout the week--this is enough for several)

1/4 c red wine vinegar
2/3 c olive oil
2 TBS dijon mustard
coarse salt and cracked pepper
add all ingredients to a small jar and shake it!

Raspberry Sandwich Cookies!


Raspberry Sandwich Cookies

The cookie part of this recipe comes from Martha's Cookie Book.

1 1/4 cups all-purpose flour
3/4 cup unsweetened Dutch-process cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups sugar, plus more for flattening cookies
10 tablespoons unsalted butter, room temperature
1 large egg, room temperature

Preheat the oven to 375 degrees Fahrenheit. Sift together flour, cocoa, baking soda, baking powder, and salt in a large bowl.

In the bowl of an electric mixer fitted with a paddle attachment, cream sugar and butter together until very light and fluffy, about 2 minutes. Add the egg and beat to combine. With the mixer on low speed, gradually add flour mixure and continue beating until dough is well-combined.

Using a 1 1/4 inch ice cream scoop, drop the dough onto parchment-lined baking sheets about two inches apart. Dip the bottom of a glass in sugar; press to flatten the cookies to about 1/8 inch thick. You may want to use a knife or flat spatula to loosen stuck cookies from the bottom of the glass.

Transfer to oven and bake until the cookies are firm, 10 to 12 minutes, rotating sheets halfway through. Transfer baking sheets to wire racks and cool completely.

Place cream filling in a pastry bag fitted with a coupler
(uh yeah.....I just spooned it in) and pipe abut 1 tablespoon of filling onto the flat side of half the cookies. Place the remaining cookies on top and squeeze the filling to the edges gently. Filled cookies can be stored in airtight containers at room temperature up to 2 days.

Frosting (bare with me on this one)

Plain old vanilla frosting wasn't going to cut if for me this time.....it was Superbowl Sunday and I was bored out of my MIND! So why not play around a bit??

Except that I ran out of powdered sugar.....so it was a bit (ok, it was pretty) sloppy....but really really good!

1 package cream cheese, room temperature
3 1/2 -4 1/2 cups powdered sugar (I'm totally guessing on this one--I ran out at 2 1/2 cups--if you make this can you tell me how much you used.....thanks!!)
1 6oz container raspberries

Mix together with a hand mixer and enjoy!

How to Build a Farmhouse Table

(the anti-climactic big reveal)

So I had hoped to have a grand ribbon cutting for the big reveal of the table....complete with chairs around the table filled with happy guests, new (old) furniture in the room, our bookcases painted, art and photographs neatly hung on the wall......but come to find out, all that takes more than a few weeks! I'll keep you posted as we add to the room.....so for now, here's brand new (but old looking!) table.

We started out with a good solid base--our OLD TABLE, bought 4 years ago at the Global Baazar Target clearance ($50!).

We are so green for using our old table. So green? Or so cheap....you decide.

We then got our wood (see here)....just from Home Depot, nothing fancy. I looked for the planks with the most knots and best grain.

Let the sanding games begin.

We (he) sanded off all of the black finish from our Target Wood table. Target wood= I have no idea what kind of wood it actually was, and believe it to be a combination of many woods fused together to create a super breed. Super weird.

It was then my turn to distress the planks. I LOVED this part. It was like art.... a little here, a little there. Dents, scratches and scuffs. And then sanding each down for a smooth and worn look.

I beat, I mean BEAT down on the ends with the hammer and the chisel, and then sanded against the grain to make it look extra worn. I also chiseled away at the legs of the table, so they weren't so perfectly square.

The stain.
The most interesting part. I wasn't loving any of the stain colors I was finding. I did a little research on how to re-create weathered wood. The answer: soaking steel wool in vinegar. I found that 24-36 hours of soaking gave me the color I liked. Soak it for a few days and the steel wool rusts, giving you a redder color.

I loved the grey tones it gave to the lighter parts of the wood. And it was DIRT CHEAP. We're talking dollars to stain the entire table (one coat) The legs took 5 coats to finally get some color...that Target wood is weird stuff. There are splotches that would take NO stain at all, but I think it adds to the look we were going for.

I just used a rag to apply the stain, and let a stain soaked rag sit on a few spots for an hour or two, to add some splotches to the wood.

Robby then used his man skills to attach the planks to our old table (screwed them in from underneath). And cut an inch off off the legs with a chop saw so the table wasn't too high (we're little people around here). I sealed it with 3 coats of polyurethane (which unfortunately took away a bit of the dusty grey look we loved so much, but it HAD to be sealed)
and.....

there you have it. All for under $75.
For now, we have no chairs....one step at a time.

Friday Love

We love Black and White Chili!
(I posted this recipe before on my old daily blog, but we love it so much it's worth the re-post. )

1 small onion, diced.
3-4 cloves garlic, minced
1 can of black beans (rinsed & drained)
1 can of white beans (rinsed & drained)
3 cups chicken broth
2 cooked chicken breast, diced
juice of 1 lime
1 tsp-1 TBS ground chipotle pepper (depending on how spicy you like it...we like it HOT!)
1/4 tsp. ground nutmeg
Saute' onion and garlic in olive oil until tender. Add remaining ingredients and simmer for at least one hour.
top with your favorites. we like cilantro, sour cream, avacado, and tortilla chips. (currently obsessing over Archer Farms Organic Blue Corn and Flax tortilla chips!)

We love when February spoils us with amazing no-jacket-required weather.

We looooove our new table. It's done!!! We still have aLOT of work to do on the room (oh, you know, like chairs) but we have a new table. I'll post a picture next week!

I love knowing exactly what I look like through the boys' eyes.
The hair is pretty accurate, the beard is unfortunate.

best of friends

just eat food.

bread + peanut butter + bananas = breakfast

Disclaimer: Again, I am not super health nazi all the time. I feel like from now on if I post any food that is not 100% healthy, I'm going to get hate mail. We try to eat like this most of the time. We do our best to what our budget allows, but I also love chips and salsa, and will not give up a good old fashioned fried tortilla chip.....oh well.

Disclaimer #2. this post a billion times longer than yesterday's!


Breakfast:
*We love oatmeal. Real oatmeal. Old fashioned oats or steel cut oats. Add a little fruit or some real maple syrup.
*Toast and peanut butter.
*Eggs.
*Cereal. I am a cereal nazi, and we only get it if the sugar is under 6g/serving and it has some protein and fiber in it. I like alot of the Kashi cereal (although check the labels--some of them have a ton of sugar), we like multigrain cheerios and plain shredded wheat (with a little honey).

Lunch:
*Who doesn't love a pb&j! On good bread, real pb without all the extra junk in it, and I do love to make jam.....which is so so so so easy.
*Leftover soup from another night.
*Grilled cheese with good bread and REAL cheese.
*Quesadillas
*Black bean burrito


Dinner:
I promise to start posting more dinner recipes on here! I do love to cook....but by the time dinner is ready, it's dark out, and makes for a terribly ugly photo.....so as soon as it lightens up a bit I'll be posting more of what we eat. Tonight we had minestrone soup!


Snacks:
* fruits/vegetables. I usually let my kids each pick out their own fruit/veggie at the store--so they can get excited about it.
*We love peanut butter. Peanut butter on apples, bananas, celery, carrots, crackers....mmm..
*Cheese and a good whole grain crackers.
*Edamame.
*Almonds. Peanuts.
*Yogurt. Not to be confused with Gogurt.
*For "treats" or snacks on the go we love Annies bunny crackers and Z bars (found at costco!), and real dried fruit (not coated in sugar and preservatives) rather than fruit snacks.
*I also recently discovered Fruitsource Mini Bites, at Costco--they are 100% fruit, with no other added crap, and my kids love them. (and ps. runners, I like a few before a long run:)

Keep it in your budget:

I try my hardest to feed my family what's best, but unfortunately it's so much cheaper to buy bad-for-you-food......why is that? Here are a few things that I do to help with costs. Even a few changes here and there will be so beneficial to your family.

*Costco is your friend. I feel like every time I'm there, they have more good-for-you options. Lots of organic choices too, like 100% applejuice, organic whole wheat spaghetti, and I get the canned organic diced tomatoes also.

*Target is your friend. (I mean really--it's Target!! It's perfect.) Target also has lots of healthy choices, I love alot of their Archer Farms brand items (all natural turkey breast), and an organic produce section (small, but it's there). They sell Laura's Lean Beef, which isn't local to us, but the cows aren't factory grown either, so for now that's what I do.

Even Walmart is upping their ante and now carrying great products like Stoney Field Farms.

Sunflower Market. As close as I can come to my beloved Trader Joes, since we don't have one (tears). Sunflower market has great selection of everything you need, and on Wednesdays they give you this week's sales, AND last week's sales.....pretty good! Their sales are amazing, and I usually try to stock up on their chicken when it's a good price.

Trader Joes. Trader Joes would be my first choice on the list, but seeing as we don't have one, I'm holding a grudge. But GO THERE NOW. Say hello. The boy and I used to walk there once a week when he was just a babe......sigh.

Plant a garden. I am a TERRIBLE gardner. But we do try. Last year was our best crop yet, and we will try even harder this year (we'll be taking a page from the book of Hayley and starting our compost)The kids love getting to eat what they worked so hard on, and so do I. And having fresh tomatoes every single day.....you just can't beat that.

Visit your Farmer's Market. We still have a while before ours starts up, but I cannot wait!! They have every fruit and veggie that you can imagine, as fresh as they come, and everything is so cheap!

Extras:
*We don't drink a ton of juice, and when we do it's 100% juice, not a "juice drink" (too much sugar!)
*Even if YOU don't like it, your kids just might. The thought of gnawing my way through a piece of celery makes me gag, but I always have it in the fridge for soups. One day I was slicing some up and asked the boy if he wanted some.....he LOVED it!
*Liz pointed out yesterday that all the food in the inner shelves of the store (rather than the outsides where the dairy, produce, and meat are) are alot cheaper....but most of it is just "pretending" to be food. A whole box of Nabisco Whatevers will not fill you up like an apple and peanut butter would. You can actually save some money by NOT buying so many items from those inside shelves. (trade in your soda and chips for something from the outside shelves)
*As much as I'd like to, I cannot afford to buy everything organic. But I make sure I buy organic:
-apples
-lettuce
-celery
-potatoes (anything that is grown underground--the fertilized soil is used over and over)
-tomatos
-grapes
-peppers
-carrots
And I skip over organic
-bananas
-melons
-avacado
-pinapple
-peas
-fruits/veggies that are protected by their peel or shell.

*Local Meat. I've been buying hormone free meat for a while now, but Food, Inc really got me pumped up about trying to find it local. I'm still working on that one, but I'll let you know what I find! I'm from Montana.....I should be able to come up with something:)
*Also, yes, REAL meat is quite a bit more than the other stuff, so that's why we don't eat meat every night. We really love bean-anything, meatless soups, eggs,and whole wheat pasta dishes.

This is so much info, and may seem a bit overwhelming. But it is really so easy.
Just eat food. No gimmicks or tricks. Just.Eat.Food.

you are what you eat

so what are you?
(ingredients for these cookies)

Before we get started....let me just say:

- I am no expert....this is just how WE do things here in the little red house
-this is the longest post you will ever read in your life
- I am NOT a perfect-eating-no-junk-food-nazi. I am NOT the mom who brings organic dried fruit slices to a birthday party and insist my kid miss out on cake. We love food! We eat healthy yummy good-for-you things most of the time.....and sometimes we indulge. I don't know if I was more proud, or more embarrassed when (in front of his entire preschool class) the boy said "I love these crunchy orange things!! What are they??!"

They were Cheetos.

I highly reccomend that everyone see Food, Inc. if you can (we got it through netflix). I didn't find it to be too "in your face", or gross/disturbing. It didn't leave me thinking I should switch over to the vegetarian team or stop shopping at the grocery store all together. But it did remind me of how important it is to seek out GOOD foods.....so watch it!

So this is how we do it:

Whole foods. Real foods. As little processing as possible. Food that was placed on the earth for us to eat....not whipped up in a lab (aka cheese whiz.)

Whole grains. "But my kids won't eat whole wheat bread/pasta/rice/etc." They WILL! I promise. If they don't have another option, and you keep cooking it over and over and over, I promise you they will eat it.
Fruits. Veggies. Free of pesticides and fertilizers.....why do you want those in your body...you don't!
Lean meats. All locally raised (or at least raised on a REAL farm, not in a factory full of disease). Free of hormones--HORMONES!! I cringe at the thought of putting them into my babies.
Same for milk, cheese, eggs, yogurt.....no hormones please!
Beans. We LOVE beans!! Black beans, white beans, we love beans!
Healthy Fats. I loooooooove a good olive oil. Avacados. Nuts (almonds are our fav!) Salmon. Your body needs these healthy fats to thrive!

Our bodies can do amazing things, but they weren't made to process modified foods, and foods that aren't actually........food. They will love you so much more if you take good care of them.

This is another reason I enjoy baking so much. I don't want to deprive my family (and my chocolate craving self) of good treats....and when I make cookies/cake/a loaf of bread, I know exactly what we are eating.

Look at the labels! What is in that box of crackers you are buying? If you don't know what it is, you probably don't want to eat too much of it.....right?

i like it when it looks like this

run, eat, and then repeat

Flourless Peanut Butter Cookies
1 cup peanut butter
1 cup brown sugar
2 eggs
1/2 cup old fashioned oats
1 tsp. baking soda
1/2 cup chocolate chips (I like the Ghirardelli 60% cocoa in these)

Mix pb and brown sugar in mixer on medium speed until nice and blended (around 3 minutes)
Add eggs. Mix well.
Mix oats and soda.
Stir in chocolate chips.
Dough will be sticky and ooey gooey (professional baking terms there)
Spoon onto parchment lined baking sheet, and bake at 350° for 10-12 minutes.

ps is that my new table?? maybe.....still needs to be sealed....look for pictures soon!

I made cookies Saturday.

Not surprised?

These long winter months really get to me.

I talk alot (and have the photos to prove it) about eating yummy things and baking tastey treats. I love both.

But what I love just as much, is exercise. (remember this ramble?)

So maybe I work out.... hard. I LOVE to sweat!! (I'm counting down the days until THIS race!)

What you don't know, is that before I made my cookies on Saturday, I ran 7 miles....so a small batch of cookies was a-o-k.

I guess what I'm trying to spit out, is a little something about balance between diet and exercise. Hillary pointed out last week that most diets tell you to skip out on cookies, cakes, bread, and basically all things delicious.....

I do not believe in diets.

I DO believe in food.

Good food. Real food.

I believe that you can eat anything you want, if done in moderation, and if you find what exercise YOU need to balance it out. For me it's running, and my new love of yoga. You may find something different works for you.

I'm also happy to say that we eat pretty healthy around here.

Yes we eat cookies. But I usually make a small batch, and we love to share with our friends.

We eat mostly all whole grains (with the occasional loaf of yummy crusty white bread to dip in our soup....of course!)

Whole grain pastas and brown rice. Whole grain bread--my kids don't know the difference.

LOTS of fruits and veggies. We love all kinds!

I'm not a meat lover, but we do love good chicken. And salmon....mmm....

We don't eat fast food. I have not been in a ff restaurant in years....(although I do love a good burger from here every now and then in the summer....but way too good to be called fast food!)

We only eat out a few times a month.

So I feel like we have earned a little wiggle room to eat some cookies....at least that's what I like to tell myself....

I am very interested to know how YOU find balance between diet and exercise?

Also, I want to continue our conversation TOMORROW about eating REAL food.

Friday Love

We love red potatoes + olive oil + rosemary + s&p + 425° for 40 minutes.

I love this guy. I love that he wore swimming goggles to cut our new bar (photos coming soon!)
I love buying tulips for myself in the middle of winter. Just because.


I love that Robby got me THIS new cookbook for my birthday. I cannot wait to dive into it!

and it's official. this model has inspired me to grow out my hair. and maybe get a llama.
