winter wednesday

Oh do I love to bake.

The only complaint that I have about summer actually, is that it is just too hot to turn on the oven. (really! that is my ONLY complaint about summer....promise!)

But the oven can do wonders to your mood when you turn it on, letting it thaw out your house from the grey and frosty outside.

And the smell of baking cookies isn't bad either.

My only problem is that with a husband at work all day, and two little one's who get only a cookie or two out of the whole batch......that leaves me to eat the rest.

Which I would, and I do.

And who does that help? No one.

So these are my "weekend cookies" It's a little batch, just to get us through the weekend, and maybe into monday if we're good.


1 1/4c flour
1/4 t baking soda
1/4 t salt
1/2 c packed brown sugar
1/4 c granulated sugar
1 stick butter ( i use salted)
1 egg
1 t vanilla (I used mexican vanilla in these...yum!)
1 c semi-sweet chocolate chips
1/2 cup chopped pecans

Mix flour, soda and salt. Set aside

Blend sugars and butter at medium speed until well mixed.
Add egg, and vanilla and mix just until blended.
Add flour mixture slowly, until just blended.
Stir in by hand chocolate chips and nuts.

Form into small balls, and space out on parchment lined cookie sheet*

Bake at 350° for 9-11 minutes.

* I used a baking mat for the first time and was really happy with how they turned out!

you know i completely understand your dilemma with eating the whole batch of cookies, right!??!

i literally took one look at these cookies and recipe and ran (not walked) to my kitchen aid to start up a batch. I will let you know how they turn out in 9 - 12 minutes.

ok. here are my observations. my cookies are not as dark. is mexican vanilla dark? dark brown sugar? chocolate shavings?

I love the chinook winds that have brought us a balmy 55* today. Sunshining on the Rockies! Beautiful after 35* below a week ago.....I think I will make these cookies to celebrate this false spring.

ali: yes--my brown sugar was dark this time...it was like a dollar cheaper for some reason...

They look delicious- I would love to make some of my own except for the fact that I would most likely have them completely eaten by the end of the day... but I do love the coziness of a house warmed by treasures in the oven.

i do love winter -- very much, simply because i enjoy winter wear. here in the bay area, where it doesn't snow -- that means i get to wear my coats and scarves and tights.

this week is better.
I love corbin's red wool man-sweater.
I love tights on my girls.
I love pajama days.
I love the blanket of snow that temporarily covered up all of my neighbor's ugly bird feeders.
(that's pretty much ALL i love about snow).
I love not being super crazy sweaty when I run.
